A popular everyday drink in Japan, it’s unique and flavourful. In historical times, brown rice was added as a filler to tea in order to stretch it for the poorest Japanese class, little did they know!

HOW TO MAKE THE PERFECT CUP
Add your sencha leaves to a teapot (one tsp per cup)
Add near-boiling water to each cup and let it cool down for 2 minutes
Pour the water from cups into the teapot
Brew for 1-2 minutes and serve
WHY CANT I USE BOILING WATER?
If you use boiling water, it will release high levels of caffeine and catechins that are bitter in flavour. The amino acids in green tea are sufficiently soluble to release the sweet and umami flavours they carry at lower temperatures.
HOW TO STORE
Store in an airtight container away from light, moisture and strong odours.
Do not freeze.
